The Perfect Picnic Potato Salad

It's got potato, it's got mayonnaise, it's got fresh herbs, baby it's got everything you need.




That's enough chit-chat, here's the recipe.


Ingredients

1kg red baby potatoes

50g butter

2 tbsp whole egg mayo

Fresh dill

Fresh spring onion

Capers

Lemon

Salt


Method

  • Quarter potatoes and throw them in a pot of salted water. Bring water to the boil for roughly 5 minutes or until potatoes are par-boiled.

  • Once par-boiled drain your potatoes and transfer to a lined baking dish, even distributing your butter to melt evenly across the taters and seasoning with salt.

  • Place tray in the oven for 45 minutes or until cooked to your liking.

  • Once your potatoes have cooked and cooled transfer them to a large bowl and add your mayo, fresh herbs, the juice of ½ a lemon and a good sprinkling of capers (add a splash of the brine if you want an extra kick)

  • Mix together well (without crushing the potatoes) and salt to you liking (hint: heaps).


Now go forth and eat the whole thing.
