5 Tired Girl Dinners

Life can be tough, food helps but I know that sometimes we simply can not be fucked.


So here are 5 dinners that I make myself when I don't want to pay Ubereats surcharge fees or toast (again).


5 Tired Girl Dinners

  1. Salmon + Greens - I can not tell you the amount of times I have eaten this meal and it's just so damn easy. Literally just throw down a piece (or two if you're thinking about lunch tomorrow) of salmon skin side down on a pan on a medium heat, while that begins to cook chop up ½ a bunch of broccolini and ½ a bunch of asparagus and then throw them in the pan too. Let everything cook together and then serve with some slaw mix and sauerkraut. Boom. Done.

  2. Chicken + Salad - Step 1 is going to require you to buy a pre-cooked woolies chicken which isn't hard but does require leaving the house. Once said chicken is acquired I literally just tear some off and throw it in a bowl with a leafy green, fresh tomato/cucumber, anything pickled I have on hand and any leftover veg I may have in the house. Air-frying up some frozen broccoli is a great option too. Dress with some olive oil + lemon juice or a spoonful of mayo and that's dinner sorted.

  3. Fried Rice - I always have some microwave rice cups on hand, I know they are not the height of sustainability or being a source bulk food shopping girl, sue me, they're handy. Now if my fridge is looking a little sad and I've got some neglected veggies in the crisper, my favourite thing to do is chop up my veg nice and small, cook it off in some oil and garlic, scramble in and egg and microwave that rice cup then throw it in the pan and season with soy sauce, sweet chilli and spring onion. (See how I regained some sustainability points by not wasting any veggies?)

  4. Pesto Pasta - Now this one is almost too easy but here we go. Boil yourself some pasta and get yourself some pesto (points for homemade but a store-bought that doesn't have too many unnecessary ingredients is also ab-fab). You can literally stop at stirring the pesto through the pasta but if you'd care to step it up a little then adding peas, broccoli or rocket would be delicious and nutritious. I always sprinkle mine with nutritional yeast and pretend it's parmesan.

  5. Half-assed Poke Bowl - Microwave rice cups coming in hot with a second mention today in one of my favourite quick dinners (and lunches). I love a fancy poke bowl as much as the next person but somedays I'm happy to settle for less. You can choose your own adventure with this concept but a great example of how I put mine together is one rice cup, a tin of salmon or tuna (tempeh is a great vegan option), fresh cucumber, grated carrot, avocado, a boiled egg if time allows and a generous serving of kewpie mayo. This can literally take 5 minutes and is heckin' tasty so it's win-win baby.


And a bonus tired girl dinner just because I love y'all - throw some potato gems and frozen broccoli florets in the airfryer (or oven) for 15-20 minutes and then add a condiment of choice and bada-bing bada-boom you have dinner. If you don't like this dinner, I don't know how to help you.
